			<content:encoded><![CDATA[<p>One of my favorite recipes to make here at my quaint <a href="http://www.yellowstonesuites.com">Montana Bed and Breakfast</a> is banana bread.   Served with a cup of strong coffee and enjoyed from a rocking chair on the back porch in the morning, life just doesn&#8217;t get any better.  And don&#8217;t feel bad if you have a second (or third) slice, it&#8217;s a healthier version using applesauce and wheat flour.</p>
<p style="text-align: center;"><strong>Makeover Banana Nut Bread</strong></p>
<ul>

<div style="text-align: center;">2 Tbs butter softened</div>
</li>

<div style="text-align: center;">3/4 cup sugar (or Splenda)</div>
</li>
<li>
<div style="text-align: center;">1 egg</div>
</li>
<li>
<div style="text-align: center;">1 egg white</div>
</li>
<li>
<div style="text-align: center;">2 cups mashed ripe bananas (about 4 medium)</div>
</li>
<li>
<div style="text-align: center;">1/4 cup unsweetened applesauce</div>
</li>
<li>
<div style="text-align: center;">1/4 cup honey</div>
</li>
<li>
<div style="text-align: center;">1 tsp vanilla extract</div>
</li>
<li>
<div style="text-align: center;">1 1/3 cup all purpose flour</div>
</li>
<li>
<div style="text-align: center;">2/3 cup wheat flour</div>
</li>
<li>
<div style="text-align: center;">1 tsp baking soda</div>
</li>
<li>
<div style="text-align: center;">1/2 tsp salt</div>
</li>
<li>
<div style="text-align: center;">1/4 cup chopped pecans</div>
</li>
</ul>
<p style="text-align: left;">In a mixing bowl, beat butter and sugar for 2 minutes or until crumbly.  Add egg, then egg white, beating well after each addition.  Beat on high speed until light &amp; fluffy.  Stir in bananas, applesuace, honey and extract.  Combine flours, baking soda and salt.  Stir into banana mixture just until moistened.</p>
<p style="text-align: left;">Pour into a 9x5x3 inch loaf pan coated with nonstick cooking spray.  Sprinkle with chopped nuts.  Bake at 325 degrees for 60-65 minutes or unitl a toothpick inserted near the center comes out clean.  Cool for 10 minutes before removing from pan to a wire rack.  Yield: 1 loaf approximately 10 slices.</p>
