One of my favorite recipes to make here at my quaint Montana Bed and Breakfast is banana bread. Served with a cup of strong coffee and enjoyed from a rocking chair on the back porch in the morning, life just doesn’t get any better. And don’t feel bad if you have a second (or third) slice, it’s a healthier version using applesauce and wheat flour.
Makeover Banana Nut Bread

2 Tbs butter softened

3/4 cup sugar (or Splenda)

1 egg

1 egg white

2 cups mashed ripe bananas (about 4 medium)

1/4 cup unsweetened applesauce

1/4 cup honey

1 tsp vanilla extract

1 1/3 cup all purpose flour

2/3 cup wheat flour

1 tsp baking soda

1/2 tsp salt

1/4 cup chopped pecans
In a mixing bowl, beat butter and sugar for 2 minutes or until crumbly. Add egg, then egg white, beating well after each addition. Beat on high speed until light & fluffy. Stir in bananas, applesuace, honey and extract. Combine flours, baking soda and salt. Stir into banana mixture just until moistened.
Pour into a 9×5x3 inch loaf pan coated with nonstick cooking spray. Sprinkle with chopped nuts. Bake at 325 degrees for 60-65 minutes or unitl a toothpick inserted near the center comes out clean. Cool for 10 minutes before removing from pan to a wire rack. Yield: 1 loaf approximately 10 slices.
